2 cans (15 ounces each) Black Beans, drained and rinsed
1 can (14 1/2 ounces) diced Mexican Tomatoes, drained
1 can (11 ounces) Corn, drained
1 can (7 ounces) diced Mild Green Chiles
1/2 cup fresh Cilantro, chopped
1/4 cup Green Onions, chopped
2 tablespoons Red Wine Vinegar
Hot Pepper Sauce, to taste
Low Fat Sour Cream, optional
Preparation:
Combine the beans, tomatoes, corn, chiles, cilantro,
green onions,
vinegar and hot sauce in a large bowl and toss together until the
vegetables are completely coated. Mix in the hot pepper sauce and/or
sour cream, if desired.
